Vegetable Pulao

Ingredients:

  1. Potato 1/4 cup
  2. Cauliflower 1/4 cup
  3. Carrot 1/4 cup
  4. Salt to taste
  5. Green beans
  6. Green peas 1/4 cup
  7. Basmati rice 2 cups
  8. Hot water 3 cups
  9. Milk 1 cup
  10. Bay leaves 2 pcs
  11. Cinnamon 2 pcs
  12. Cardamom 3 pcs
  13. Cloves 3 pcs
  14. Mace 1
  15. Shah jeera / Black cumin 1/2 tsp
  16. Onions 1/2 cup
  17. Ginger paste 1/2 tsp
  18. Garlic paste 1/2 tsp
  19. Green chilli sliced 7-8 pcs
  20. Ghee 1 tbsp

 

Directions

Wash and soak basmati rice in water for 30 minutes. After 30 minutes, drain the rice and keep aside.

Wash and cut all veggies into small pieces.

Heat oil in a wok, add potatoes and carrots. Add salt as required and saute until the potatoes are half cooked. Add remaining veggies and saute again for 2 minutes. Remove from pan and keep aside.

Heat oil in the pan, add shah jeera, bay leaves, cardamoms, cloves, cinnamon, mace and sauté the garam masala till they crackle. Add onions and sauté until they are translucent. Add ginger and garlic paste, stir and sauté everything together. Add hot water and milk, cover with lid and cook until the water comes to a boil. Add soaked rice, gently stir and cover with lid and continue to cook the rice until it’s 75% done. Add green chilli, fried onion, mint, corriander and ghee and cover it . Cook for 10 min at dome.
